How To Prepare Your Commercial Kitchen Equipment for Long-Term Storage

Readying your equipment for long-term storage isn't as simple as unplugging it and going on your way. This could lead to rusting, dust build-up, corrosion, and other problems that could shorten the lifespan of your equipment.

In general, you will want to thoroughly clean, dry, and cover all of your equipment, as well as unplug the units (if applicable). Some equipment, however, will require additional steps to be fully prepared for storage.

Cooking Equipment Preparation

Cooking equipment surfaces (such as plates and grates) can be covered with food-grade oil. This will keep moisture from ruining these surfaces.

Griddles & Charbroilers

If you have any cast iron plates/grates, you will need to season them before oiling to prevent rusting. You can also cover your plates with plastic, which will help maintain the protective barrier provided by the oil.

Panini Grills

You should store your panini grill in the closed position, then cover it.

Mixer Preparation

Cover the bowl lift rails and shaft with food-grade oil.

Slicer Preparation

Apply food-grade oil to the sharpening rods and the slicer end weight slide rod. NOTE: Do not use vegetable oil on your slicer, as this may damage the equipment.

Scale Preparation

Batteries can corrode and damage your scale if left in your equipment. Simply remove the batteries to prevent this from happening.
